Awaken Your Taste Buds with Coffee Meringue Kisses

These make an attractive accompaniment to a bowl of fresh fruit or, if you decide not to serve a formal dessert , you could make mini versions and enjoy them with coffee or tea .

The unfilled meringues can be made well ahead and stored in an airtight container.

for the meringues

3 large egg whites

175 g (6 oz.) caster sugar

1 tsp coffee essence (or tbsp instant coffee dissolved in 1tbsp boiling water and cooled)

for the decoration & filling

175 g (6 oz.) plain chocolate, chopped

125 ml (4 fl oz.) double cream

1 tsp vanilla essence

cocoa powder, to dust

Preheat oven to 110′ C ( 225′ F/gas mark 1/4 ). Line two baking trays with baking parchment.

To make the meringues, whisk egg whites in a large bowl until soft peak stage. Whisk in sugar, 1 teaspoon at the time to begin with. Then, as egg whites start to thicken, add sugar in a steady stream. When all the sugar has been added, whisk in coffee. Spoon or pipe 12 meringues on each baking tray. bake for 2 hours or until dry and crisp. Cool in the turned-off oven, then carefully lift meringues from parchment.

To decorate and make the filling, melt chocolate in a bowl set over a pan of hot water, stirring occasionally until smooth. Line baking trays with clean parchment and dip bottoms of meringues in melted chocolate. Place them, chocolate-side down, on the parchment. Drizzle with remaining chocolate and allow to set. Whip cream with vanilla until it holds its shape.

Use it to sandwich meringues together in pairs. Dust lightly with cocoa powder to serve

Variations :

  1. Mocha Madness: Add a touch of cocoa powder to the meringue mixture to create a delightful mocha flavor. You can also sprinkle some grated dark chocolate on top for an extra indulgence.
  2. Caramel Latte Love: Incorporate a swirl of caramel sauce into the meringue mixture before piping. The combination of coffee, caramel, and the light, airy texture of the meringue will be a true delight.
